Which AMD 4th gen EPYC CPU is right for me?

The last few months have seen a lot of iterations of the 4th generation of AMD’s EPYC server CPUs. This has resulted in an extensive range of CPUs under a variety of names and numbers - Genoa, Genoa-X and Bergamo make up the 9004 family, whilst Siena or 8004 is the most recent launch.
